In any case, if you were to end up with a chorizo that was very dry on the outside, and quite a bit softer on the inside, you can normally fix the problem by wrapping the sausages in wax paper or plastic, and leaving in the refrigerator for a few days. When is my dry cured homemade Spanish chorizo ready? I like mine in the later, dryer stages, so I rarely weigh it anymore.
